Backwoods in the Gorge
Different from any sour we've done before, we started with a "Brett beer" base, added Juice yeast for haziness and pureed raspberries for additional tartness and sweetness to balance out the bold flavors. Then we aged it in French oak wine barrels for nearly 10 months to finish it.
